Crusnos was a custard-like pudding made with milk from the second milking after a cow had calved.

The milk, mixed with a little salt and sugar, was placed in a double-boiler to prevent curdling and sprinkled with nutmeg.

It was left to cook very slowly until firm and golden brown.
