| Elderflower Wine |
In the garden of almost
every old Manx cottage can be seen an Elder tree (trammon).
This tree was used as a charm for protecting houses and gardens
from the influence of sorcery and witchcraft. Its leaves, like those of the
rowan (cuirn) were picked on May Eve and fixed to doors and windows to protect
the household from evil influence.

6 Elder Flowers in Full Bloom
2 Tablespoons of
White Wine Vinegar
Juice of 1
Lemon
1 1/2 lb. of Sugar
1 Gallon of Cold Water
Put all ingredients into a large container and leave for twenty
four hours.
Sieve, bottle and leave for about
a fortnight.
