If a woman was near to confinement, the people used to remark " There'll be bread and cheese in that house in a short time". This expression stemmed from the fact that it was customary from the birth of the child to its baptism to keep a wooden hoop (dollan) of loaves and cheese in the room where the woman was confined.

The gossips who came to visit her would freely partake of the food, and small pieces of bread and cheese called "blithe meat" were scattered around the house for the fairies.

When the child was taken to church to be baptised, the woman who carried it also carried some bread and cheese. This was presented to the first person she met - a gesture which was believed to preserve the child from evil influence.


2 lb. of Wholewheat Flour

1 Tablespoon of salt

3 1/2 Cups of Warm Water



Mix together the flour and salt, and gradually add the water, using a spoon to mix, until the dough begins to form. Then, mixing with the hands, add the rest of the water, until the dough is of earlobe consistency. Knead for five minutes. Cover with a damp towel and leave in a warm place for 12 - 24 hours.

Knead again and put the dough in oiled bread tins. Make a slit in the top of the loaves and let prove in a warm place for a further four hours.

Bake at 350 deg F (regulo 4) for half an hour, then turn up the heat to 400 deg F (regulo 5) for three quarters to one hour.
