| Honey Sponge |
Manx honey has a
distinctive flavour and is delicious when used to sweeten cakes and fudges. The
old Manx treated the bees with great respect and when the head of the household
died the bees were always told.
It was also
considered lucky if a bee flew indoors.
Legend
has it that at midnight on Old Christmas Eve - 4th January - the bees can be
heard humming loudly in memory of the birth of Jesus.
The Sponge

Eggs
1 oz. Honey
3 oz. Sugar
4 oz. Plain
Flour
Whisk sugar, eggs and honey
thoroughly in a basin over a pan of hot water. Fold in the sieved flour until
clear. Pour into two 6" x 1" sandwich tins which have been greased and floured.
Bake in a moderate oven until risen and firm (fifteen to twenty minutes).
Allow to cool. Spread one cake with the
filling and sandwich together.

Filling
1 Egg
Yolk
1 oz. Honey
3 oz. Butter or Margarine
1
Dessert Spoon of Water
1 oz. Caster
Sugar
Beat egg, water, sugar and honey
until white and creamy.
Add the previously
softened butter or margarine and beat until
smooth.
